Consumption of rabbit meat has not penetrated the general populace as a credible substitute for chicken, beef and pork which are the most consumed meat types and widely available in the South African supermarkets. Although rabbit meat has a high nutrition content and good health benefits, it is not yet a commonly consumed meat variety in other parts of the country. This study was undertaken to identify consumers’ perceptions towards rabbit meat consumption in Daveyton and Etwatwa area, Gauteng Province of South Africa. A proportionate sampling technique was used to determine the samples for each of the two study areas to select 382 participants from a pull sampling frame of 85000 participants. A semi-structured questionnaire was used to collect primary data by interviewing 382 selected participants. The Statistical Package for Social Science (SPSS), version 28.0, was used to analyse the data. To determine the consumer perception for rabbit meat, a 5-point Likert scale was used. Furthermore, a Principal Component Analysis (PCA) was used to analyse the relationship of the initial variables by extracting significant components. The results of the study showed that 61% of consumers agreed that they do not know where to buy rabbit meat in the study area. When comparing other meat types to rabbit meat in terms of health benefits, freshness, taste, appearance, texture and flavour, 43.6% respondents were neutral. Four PCAs were extracted to be significant and loaded positively indicating that consumers had positive perceptions towards rabbit meat and were represented by: health consciousness, rabbit meat availability, and behavioural considerations; beliefs and social acceptability; social considerations and perception on affordability, and sensory appeal. It is, therefore, recommended that support to the rabbit meat market should be informed by the determinants. The local meat market should initiate more rabbit meat sales in the study area since there is less access to rabbit meat. Consumer perceptions towards rabbit meat consumption in Daveyton and Etwatwa areas of Gauteng Province, South Africa

The current study evaluates the effect of sequential hydrolysis on degree of hydrolysis and antioxidant activity of Chachafruto (Erythrina edulis) storage proteins hydrolysates, which is an endemic South American legume. Besides, sequential enzymatic hydrolysis of Chachafruto, storage proteins was studied to determine the type of protein and combination of proteases that would produce hydrolysates with the highest in vitro antioxidant activity. In order to obtain each of the storage proteins of Chachafruto separately, sequential extraction was carried out. A 500 mL reactor with a magnetic stirrer at 960 rpm was used, which were controlled by means of an automatic titrator. The reaction was monitored through the degree of hydrolysis, calculated by the pH-stat method. First, each enzyme as single enzyme was used in hydrolysis process, then Flavourzyme followed by Alcalase 2.4L® and Neutrase followed by Alcalase 2.4L® were used to produce hydrolysates from albumins, globulins and glutelins from Chachafruto. Antioxidant activity was evaluated in each hydrolysate by oxygen radical antioxidant capacity (ORAC), 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2′ -azino-bis(3-ethylbenzothiazoline)-6-sulfonic acid (ABTS) methods. The results showed that Chachafruto seeds flour have above 20% of protein, which contain 46.36%, 11.39%, 42.01% and 0.23%, of albumins, globulins, glutelins, and prolamins, respectively. Besides, it is possible to increase the degree of hydrolysis and antioxidant activity by sequentially using Flavourzyme-Alcalase and Neutrase-Alcalase, compared to hydrolysis with a single enzyme, for all storage protein evaluated. Among the storage proteins from Chachafruto, the albumins hydrolyzed showed the highest antioxidants. Both, Neutrase-Alcalase and Flavourzyme-Alcalase hydrolysates showed antioxidant activity, being Flavourzyme-Alcalase combination which showing the higher antioxidant activity. In conclusion, Chachafruto seed can produce a flour with high protein contained, which storage protein are potential source for functionals compound with antioxidant activity, when are subjected to enzymatic hydrolysis by Alcalase, Flavourzyme and Neutrase enzymes, either as single and sequential enzymatic hydrolysis process. One of the solutions to overcome malnutrition is to set up some policies to encourage vegetable consumption. Indeed, vegetables are important for human nutrition and health. They are rich in bioactive nutrients such as vitamins, minerals, phytochemical compounds, and dietary fiber. But in Benin, vegetable consumption is very low and their production is also facing many challenges. Understanding the food environment seems to be a key step to address relevant policies to improve healthy vegetable production and consumption. This study aims to understand the food policy environment in general, and in particular the policies, stakeholders, and their perceptions of the challenges and policy priorities for the production and consumption of vegetables in Benin. For this, through a qualitative approach, a documentation review of the existing policies were done. In addition, stakeholders' NetMap workshop which gathered 15 participants and 22 stakeholders’ interviews were carried out. The interview data were processed and analyzed through a content-based analysis approach with Quirkos software. The results showed that many policies have been designed and implemented to improve food systems in Benin. These policies are mostly oriented toward agricultural product supply in terms of quantity (availability) and on improving social protection, equity, and livelihood, but with little attention paid to quality. The results of the interviews revealed many issues such as the high post-harvest losses, the high use of chemical fertilizers and pesticides, the weak access to improved seeds. In addition, the lack of food marketing and promotion, the lack of local vegetables promotion and the weak adaption strategies to address climate change effects have also been pointed out as issues. All these issues are seen by the stakeholders as priority points of attention that current and future policies should address to enable the environment for vegetable-rich diets in the country. The ‘enabling environment’ for vegetable-rich diets in Benin: An analysis of policies, stakeholders and framings

Tea undergoes intricate processing in factories, generating substantial effluents that pose significant environmental challenges. This study explored the proximate and elemental composition of tea effluents obtained from various factories to determine their potential benefits, especially in agriculture and health. The proximate composition analysis revealed significant (P&lt;0.05) variations in ash, crude fiber, carbohydrates, proteins, and lipids across samples from different factories. Notably, ash content in fluff samples from Mudete and Ogembo, and fly-off from Kionyo factories, is statistically comparable (P&gt;0.05) but significantly higher than other samples (P&lt;0.05). The cyclone fluff from the Kinoro factory exhibited significantly lower ash content than all other samples (P&lt;0.05). The study further examined microelement minerals (calcium, potassium, magnesium, sodium, phosphorus) in tea samples, showcasing significant variations. The fluff sample from the Ogembo factory showed significantly higher calcium levels than others (P&lt;0.05), while the cyclone sample from Mogogosiek displays significantly lower calcium concentrations than other samples (P&lt;0.05). Regarding micronutrient/trace mineral elements, the fluff sample from the Gitambo factory has significantly higher Boron concentrations than other tea samples (P&lt;0.05). Significant differences were observed in Cobalt concentrations, with cyclone fluff samples from Chelal and Momul factories showing significantly higher levels than others (P&lt;0.05). The concentration of heavy metals (Aluminium, Chromium, Lead) in tea effluents varies significantly among samples from different factories (P&lt;0.05). The cyclone fluff samples from Boito and Chelal factories and fluff samples Mogogosiek factory showed significantly higher Aluminium concentrations than others (P&lt;0.05). The cyclone fluff sample from the Kinoro factory exhibited significantly lower Aluminium levels than others (P&lt;0.05). Therefore, future research should delve into specific processes contributing to these variations, enabling tailored strategies for sustainable waste management in the tea industry. Moreover, adopting environmentally conscious approaches, informed by a nuanced understanding of metal concentrations in tea effluents, is imperative for ensuring the long-term viability of the tea industry and safeguarding environmental health. The Indonesian Nutrition Status Study stated that cases of underweight or malnutrition with a weight for age index are around 17%. The efforts made by the government today to overcome the problem of malnutrition of children under five in Indonesia are still not optimal with programs that have been made by the government. The incidence of underweight continues to increase from 2019 to 2022 in Indonesia. The development of a culture-based intervention 'Papadangan' which is a communal eating activity was carried out to reduce this number. This study was conducted to develop the 'Papadangan' culture so that it becomes one of the efforts that can be done by the government. This eating habit can be used as an alternative for the community to increase the appetite of children under five in Tangerang, meaning that indirectly the community has made efforts to improve nutrition in children under five through eating together in the area. This research used Participatory Action Research (PAR) which consists of 2 cycles. This research was conducted from November 2022 to January 2024. Fifty participants consisting of children and caregivers were involved in this study. The Children under five weights were measured before and after the procedure using assessment instruments, the z score table, the camstock feeding scale and the toddler anthropometric table. In-depth interviews were conducted with mothers of children under five to explore the eating habits of Sundanese children under five with underweight and good nutritional status. 'Papadangan' can be developed into a strategy to prevent underweight nutrition problems by adding nutrition and health education: paying attention to the feeding schedule of children under five years old, variations in food consumption, education related to elements of balanced nutrition, and eating hygiene in the implementation of papadangan eating culture activities. 'Papadangan' can be used as one of the strategies to reduce the incidence of underweight in children under five years old. Developing the papadangan eating culture has become a new research, and this strategy is effective in changing the eating patterns of toddlers and reducing the rate of malnutrition among toddlers in Pekayon village, Sukadiri District, Tangerang City.
